Pork and Pistachio Terrine with Poached Pears....





On my side of the world
 Autumn well and truly has us in her grasp!
Immediately my thoughts turn to delicious
heart-warming food.

It was our embroidery groups fortnightly meeting
on Tuesday and the venue was my home!



I decided to serve a long time family favorite
Pork and Veal Pistachio terrine.
Pears are in plentiful supply now, so I poached
some in lemon juice, water and brown sugar.




I served both the terrine and pears warm
with salad on the side
and some crusty french bread... very yummy!


PORK & VEAL PISTACHIO TERRINE


1lb Lean pork and Veal minced
4oz Cooked ham - thick pieces diced
1 heaped Tbsp Fresh chopped herbs
2oz Red Onion - grated

½ - 1 Clove Garlic - crushed
1 level tsp freshly grated Nutmeg
1 tsp Salt & freshly ground Black Pepper
1 Egg to bind all together

10oz Frozen Spinach - thawed
(squeeze all water out - I do this with my hands
or you can press it over a sieve)
Pistachio Nuts - halved
 Streaky Bacon

Mix the first 8 ingredients together in a bowl.
Then add spinach and pistachios - mix through.

 Grease a meat loaf tin
Line with long strips of streaky bacon
on bottom and up sides of tin.

Add terrine mixture to tin
fold the bacon from the sides over top of loaf.

Bake in oven @ 160º for 1 hour.




 
  



The autumn crops of tomatoes are so tasty
kissed by the sun and full of juicy goodness.

  10. That looks and sounds amazing! I gave up beef and pork over a year ago and sometimes it is hard like. Seeing your yummy meal makes me want some. And I really miss a juicy burger. But my digestive system no longer has psin so I will keep on eating my veggies and chicken! Happy autumn to you.

  11. Thanks for your reply - It is a pity veal is not generally available isn't it. Your terrine looks delicious - I suppose one could also use chicken in place of the veal - must try one day.

  12. What a feast you served your guests. The combination of flavors, textures and colors must have been so delicious.

    As we approach early summer over here, it will be quite a wait until real, naturally ripened tomatoes appear at the local farmers market. They are so wonderful...I loved the look of your salad and appreciated your description, too.

    Thanks for stopping by and asking about the Poppers...no I've never frozen them. When we have them, I make just enough for us to eat all at one time. It's simple enough to make that I've never even thought about trying to freeze them.

    Ich bin zwar satt, hatte grade eine heiße, scharfe Serbische Bohnensuppe mit viel Knoblauch...
    Aber in diese schöne Fleisch-Terrine könnte ich sofort reinbeissen :-)

  16. I do believe I must try this recipe. It sounds just delicious. What a lovely fall meal. We are just planting our tomatoes and buying more roses for the garden today. But dreaming of tomatoes and roses such as you are enjoying in the autumn.
